I don’t know about you, but I am definitely ready for summer already! And with all these juicy, sweet pineapples now available at the market, I’m looking for lots of delicious ways to enjoy them.
I’ll admit it, I’ve had a pina colada or two, but hate the headache, they are pretty dope and easy to over do. For that reason, I tend to save them for special beach vacations and parties. This smoothie, however, has all the flavor of the traditional poolside drink without the headache.
I found that the best combination for coconut creaminess is the combination of yogurt and coconut milk. Coconut milk is pretty high in calories though, so I only used a tiny bit for that Caribbean flair. When you add fresh pineapple and tiny bit of sweetened flaked coconut to the mix, you have the perfect afternoon treat!
- 1 cup fresh pineapple, chopped
- 1/4 cup coconut milk
- ¼ cup vanilla (or coconut!) flavored yogurt
- 1 tbsp sweetened flaked coconut
- Blend all ingredients until smooth
- Serve with additional flaked coconut on top
